Ingredients:
- 1.5 pounds Italian sausage (mild or spicy)
- 2 tablespoons olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil or parsley, chopped (for garnish, optional)
Instructions:
- Preheat the oven to 400°F (200°C).
- Prepare a baking sheet by lining it with parchment paper (optional).
- In a mixing bowl, combine sliced bell peppers, onion, garlic, olive oil, oregano, basil, salt, and pepper. Toss to combine.
- Spread the sausage links evenly across the prepared baking sheet.
- Distribute the vegetable mixture around the sausages on the baking sheet.
- Bake in the preheated oven for 30-40 minutes, flipping the sausages halfway. Sausages should be browned and have an internal temperature of 160°F (70°C), and vegetables should be tender.
- Remove from the oven and let rest for a few minutes before serving.
- Garnish with fresh basil or parsley, if desired.
