Ingredients:

  • 1.5 pounds Italian sausage (mild or spicy)
  • 2 tablespoons olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil or parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper (optional).
  3. In a mixing bowl, combine sliced bell peppers, onion, garlic, olive oil, oregano, basil, salt, and pepper. Toss to combine.
  4. Spread the sausage links evenly across the prepared baking sheet.
  5. Distribute the vegetable mixture around the sausages on the baking sheet.
  6. Bake in the preheated oven for 30-40 minutes, flipping the sausages halfway. Sausages should be browned and have an internal temperature of 160°F (70°C), and vegetables should be tender.
  7. Remove from the oven and let rest for a few minutes before serving.
  8. Garnish with fresh basil or parsley, if desired.
