Ingredients:
- 4 salmon fillets (about 6 oz each, skin-on or skinless)
- 2 tablespoons olive oil (30 mL)
- Salt and freshly ground black pepper, to taste
- 4 tablespoons unsalted butter, softened (56 g)
- Zest of 1 lemon
- 2 tablespoons fresh parsley, chopped (30 mL)
- 1 tablespoon fresh dill, chopped (15 mL)
- 1 tablespoon fresh chives, chopped (15 mL)
- Juice of 1 lemon (about 2 tablespoons or 30 mL)
- 1 clove garlic, minced
Instructions:
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper for easier cleanup.
- Place the salmon fillets on the baking sheet. Drizzle with olive oil, and season with salt and pepper.
- In a mixing bowl, combine softened butter, lemon zest, parsley, dill, chives, lemon juice, and minced garlic. Mix well until combined.
- Spread the lemon herb butter evenly over each salmon fillet.
- Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from oven and let rest for a couple of minutes before serving.
