Ingredients:

  • 4 salmon fillets (about 6 oz each, skin-on or skinless)
  • 2 tablespoons olive oil (30 mL)
  • Salt and freshly ground black pepper, to taste
  • 4 tablespoons unsalted butter, softened (56 g)
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped (30 mL)
  • 1 tablespoon fresh dill, chopped (15 mL)
  • 1 tablespoon fresh chives, chopped (15 mL)
  • Juice of 1 lemon (about 2 tablespoons or 30 mL)
  • 1 clove garlic, minced

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper for easier cleanup.
  3. Place the salmon fillets on the baking sheet. Drizzle with olive oil, and season with salt and pepper.
  4. In a mixing bowl, combine softened butter, lemon zest, parsley, dill, chives, lemon juice, and minced garlic. Mix well until combined.
  5. Spread the lemon herb butter evenly over each salmon fillet.
  6. Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  7. Remove from oven and let rest for a couple of minutes before serving.
