Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on or off
- 2 tablespoons olive oil, extra virgin
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs, chopped (dill, parsley, thyme, or a mix)
- ½ teaspoon salt
- ¼ teaspoon black pepper, freshly ground
Instructions:
- Preheat the oven: Set oven to 400°F (200°C).
- Prepare the Marinade: In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, chopped herbs, salt, and pepper.
- Marinate the Salmon: Place salmon fillets on the baking sheet lined with parchment paper (if using). Pour the marinade evenly over the salmon.
- Bake the Salmon: Bake in the preheated oven for 12-15 minutes, or until the internal temperature reaches 145°F (63°C). Use an instant-read thermometer inserted into the thickest part of a fillet to check for doneness. Look for the salmon to flake easily with a fork.
- Rest and Serve: Remove the salmon from the oven and let it rest for a couple of minutes. Garnish with lemon wedges and fresh herbs, if desired.
