Ingredients:

  • 2 large ripe bananas, mashed (approximately 240g / 8.5 oz)
  • 1/2 cup full-fat coconut milk (120 ml / 4 fl oz)
  • 2 large eggs
  • 1 teaspoon vanilla extract (5 ml)
  • 2 tablespoons maple syrup or honey (30 ml / 1 fl oz)
  • 1 1/2 cups almond flour (150g / 5.3 oz) (or tigernut flour for nut-free)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/4 cup chopped walnuts or pecans (optional)
  • Banana slices for decoration (optional)
  • Coconut flakes (optional)
  • Dairy-free chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  2. In a large bowl, whisk together mashed bananas, coconut milk, eggs, vanilla extract, and maple syrup/honey.
  3. In a separate bowl, whisk together almond flour (or tigernut flour), baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared baking dish.
  6. Sprinkle with chopped nuts, banana slices, coconut flakes, or chocolate chips if desired.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
  8. Let cool slightly before slicing and serving the banana oatmeal paleo bake.
