Ingredients:
- 2 large ripe bananas, mashed (approximately 240g / 8.5 oz)
- 1/2 cup full-fat coconut milk (120 ml / 4 fl oz)
- 2 large eggs
- 1 teaspoon vanilla extract (5 ml)
- 2 tablespoons maple syrup or honey (30 ml / 1 fl oz)
- 1 1/2 cups almond flour (150g / 5.3 oz) (or tigernut flour for nut-free)
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- 1/4 cup chopped walnuts or pecans (optional)
- Banana slices for decoration (optional)
- Coconut flakes (optional)
- Dairy-free chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease an 8x8 inch baking dish.
- In a large bowl, whisk together mashed bananas, coconut milk, eggs, vanilla extract, and maple syrup/honey.
- In a separate bowl, whisk together almond flour (or tigernut flour), baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Pour the batter into the prepared baking dish.
- Sprinkle with chopped nuts, banana slices, coconut flakes, or chocolate chips if desired.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
