Ingredients:

  • 2 (6-ounce/170g) cod fillets
  • 1 tablespoon/15ml olive oil
  • 1/2 teaspoon/2.5ml sea salt
  • 1/4 teaspoon/1.25ml black pepper
  • 1 tablespoon/15g unsalted butter
  • 4 tablespoons/57g unsalted butter
  • 2 cloves garlic, minced
  • 2 tablespoons/30ml dry white wine (optional)
  • 2 tablespoons/30ml fresh lemon juice
  • 2 tablespoons/30ml chopped fresh parsley
  • 1 tablespoon/15ml chopped fresh chives
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste

Instructions:

  1. Pat the cod fillets dry with paper towels. Season with salt and pepper.
  2. Heat the olive oil and butter in a skillet over medium-high heat until shimmering. Sear cod 4-5 minutes per side or until cooked through.
  3. Remove cod and set aside, tented with foil.
  4. In a saucepan, melt butter over medium heat. Add garlic and sauté for 30 seconds.
  5. Pour in wine (if using) and simmer for 1 minute. Stir in lemon juice, parsley, chives, and red pepper flakes (if using). Season with salt and pepper.
  6. Spoon sauce over cod and serve immediately.
