Ingredients:
- 2 (6-ounce/170g) cod fillets
- 1 tablespoon/15ml olive oil
- 1/2 teaspoon/2.5ml sea salt
- 1/4 teaspoon/1.25ml black pepper
- 1 tablespoon/15g unsalted butter
- 4 tablespoons/57g unsalted butter
- 2 cloves garlic, minced
- 2 tablespoons/30ml dry white wine (optional)
- 2 tablespoons/30ml fresh lemon juice
- 2 tablespoons/30ml chopped fresh parsley
- 1 tablespoon/15ml chopped fresh chives
- Pinch of red pepper flakes (optional)
- Salt and pepper to taste
Instructions:
- Pat the cod fillets dry with paper towels. Season with salt and pepper.
- Heat the olive oil and butter in a skillet over medium-high heat until shimmering. Sear cod 4-5 minutes per side or until cooked through.
- Remove cod and set aside, tented with foil.
- In a saucepan, melt butter over medium heat. Add garlic and sauté for 30 seconds.
- Pour in wine (if using) and simmer for 1 minute. Stir in lemon juice, parsley, chives, and red pepper flakes (if using). Season with salt and pepper.
- Spoon sauce over cod and serve immediately.
