Ingredients:
- 1.5 lbs fresh green beans, ends trimmed
- 2 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- 1/2 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/2 tsp red pepper flakes
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1 tbsp unsalted butter, melted
- 1/2 fresh lemon, zested and juiced
Instructions:
- Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or a silicone mat to prevent sticking.
- In a large mixing bowl, toss the trimmed green beans with olive oil, minced garlic, salt, pepper, and red pepper flakes until every bean is evenly coated.
- Spread the beans in a single layer on the prepared baking sheet. Ensure the pan is not crowded to allow for roasting rather than steaming; use two sheets if necessary.
- Place in the oven and roast for 12–15 minutes until the beans are tender-crisp and starting to show brown blister marks.
- While the beans roast, mix the Parmesan cheese, panko breadcrumbs, and melted butter in a small bowl.
- Sprinkle the Parmesan mixture evenly over the roasted beans and return the pan to the oven for another 5 minutes, or until the cheese is melted and the breadcrumbs are golden brown.
- Remove from the oven and immediately drizzle with fresh lemon juice and a sprinkle of lemon zest before serving.
