Ingredients:

  • 4 cups (approximately 700g) fresh or frozen sliced peaches (if frozen, thawed), drained well
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons (30ml) lemon juice
  • 1/2 teaspoon (2.5ml) ground cinnamon
  • 1 tablespoon (7.5g) cornstarch
  • 1 cup (120g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 teaspoon (5ml) baking powder
  • 1/2 teaspoon (2.5ml) salt
  • 3/4 cup (180ml) milk
  • 1/2 cup (113g) unsalted butter, melted

Instructions:

  1. Combine peaches, sugar, lemon juice, cinnamon, and cornstarch in a bowl. Toss gently to coat.
  2. Spread the peach mixture evenly into the baking dish.
  3. Whisk together flour, sugar, baking powder, and salt. Stir in milk until just combined. Pour melted butter over the batter and gently fold it in until almost combined. Don't overmix!
  4. Drop spoonfuls of the topping evenly over the peach mixture. It doesn't need to be perfectly covered.
  5. Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly. Let cool slightly before serving.
