Ingredients:
- 4 cups (approximately 700g) fresh or frozen sliced peaches (if frozen, thawed), drained well
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (30ml) lemon juice
- 1/2 teaspoon (2.5ml) ground cinnamon
- 1 tablespoon (7.5g) cornstarch
- 1 cup (120g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 teaspoon (5ml) baking powder
- 1/2 teaspoon (2.5ml) salt
- 3/4 cup (180ml) milk
- 1/2 cup (113g) unsalted butter, melted
Instructions:
- Combine peaches, sugar, lemon juice, cinnamon, and cornstarch in a bowl. Toss gently to coat.
- Spread the peach mixture evenly into the baking dish.
- Whisk together flour, sugar, baking powder, and salt. Stir in milk until just combined. Pour melted butter over the batter and gently fold it in until almost combined. Don't overmix!
- Drop spoonfuls of the topping evenly over the peach mixture. It doesn't need to be perfectly covered.
- Bake in a preheated oven at 375°F (190°C) for 35-40 minutes, or until the topping is golden brown and the filling is bubbly. Let cool slightly before serving.
