Ingredients:

  • 2 large ripe bananas, mashed (about 1 cup / 240ml)
  • 1/2 cup (120ml) milk (dairy or non-dairy)
  • 1/4 cup (60ml) maple syrup, honey or agave
  • 1/4 cup (65g) creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups (240g) rolled oats (old-fashioned), gluten-free if desired
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Sliced bananas (optional)
  • Chopped peanuts (optional)
  • Peanut butter drizzle (optional)
  • Chocolate chips (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Add the milk, maple syrup, peanut butter, egg, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. In the same bowl, add the rolled oats, baking powder, cinnamon, and salt. Stir until just combined; do not overmix.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Top with sliced bananas, chopped peanuts, and any other desired toppings.
  7. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool for a few minutes before serving.
