Ingredients:
- 2 large ripe bananas, mashed (about 1 cup / 240ml)
- 1/2 cup (120ml) milk (dairy or non-dairy)
- 1/4 cup (60ml) maple syrup, honey or agave
- 1/4 cup (65g) creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups (240g) rolled oats (old-fashioned), gluten-free if desired
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- Sliced bananas (optional)
- Chopped peanuts (optional)
- Peanut butter drizzle (optional)
- Chocolate chips (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- In a large mixing bowl, mash the bananas until smooth.
- Add the milk, maple syrup, peanut butter, egg, and vanilla extract to the mashed bananas. Whisk until well combined.
- In the same bowl, add the rolled oats, baking powder, cinnamon, and salt. Stir until just combined; do not overmix.
- Pour the mixture into the prepared baking dish and spread evenly.
- Top with sliced bananas, chopped peanuts, and any other desired toppings.
- Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Let cool for a few minutes before serving.
