Ingredients:

  • 1 cup (90g) rolled oats (old-fashioned or quick-cooking)
  • ½ cup (120g) creamy peanut butter (natural or processed)
  • ⅓ cup (80ml) honey
  • 2 tablespoons (30ml) chia seeds
  • ¼ cup (40g) mini chocolate chips
  • 1 teaspoon (5ml) vanilla extract
  • ⅛ teaspoon (pinch) sea salt
  • Optional coating: shredded coconut, chopped nuts, cocoa powder

Instructions:

  1. In a large bowl, combine rolled oats, chia seeds, chocolate chips, and salt.
  2. Add peanut butter, honey, and vanilla extract to the dry ingredients.
  3. Stir all ingredients together until well combined. The mixture should be slightly sticky.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
  5. Roll the mixture into 1-inch balls.
  6. If desired, roll the energy balls in shredded coconut, chopped nuts, or cocoa powder.
  7. Place the finished energy balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 15 minutes to set. Store in an airtight container in the refrigerator.
