Ingredients:
- 1 cup (90g) rolled oats (old-fashioned or quick-cooking)
- ½ cup (120g) creamy peanut butter (natural or processed)
- ⅓ cup (80ml) honey
- 2 tablespoons (30ml) chia seeds
- ¼ cup (40g) mini chocolate chips
- 1 teaspoon (5ml) vanilla extract
- ⅛ teaspoon (pinch) sea salt
- Optional coating: shredded coconut, chopped nuts, cocoa powder
Instructions:
- In a large bowl, combine rolled oats, chia seeds, chocolate chips, and salt.
- Add peanut butter, honey, and vanilla extract to the dry ingredients.
- Stir all ingredients together until well combined. The mixture should be slightly sticky.
- Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
- Roll the mixture into 1-inch balls.
- If desired, roll the energy balls in shredded coconut, chopped nuts, or cocoa powder.
- Place the finished energy balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 15 minutes to set. Store in an airtight container in the refrigerator.
