Ingredients:
- 1.5 lbs (680g) medium zucchini, sliced into 1/4-inch (0.6cm) thick rounds
- 2 tablespoons olive oil
- 2 cloves garlic, minced (about 2 teaspoons)
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh mint
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions:
- Wash and slice the zucchini into uniform rounds.
- Heat olive oil in the skillet over medium-high heat until shimmering.
- Add zucchini slices in a single layer (work in batches if necessary). Cook until golden brown on one side, then flip and cook until tender and browned on the other side (about 3-5 minutes per side).
- Reduce heat to medium. Add minced garlic and cook until fragrant (about 30 seconds).
- Remove from heat. Stir in lemon juice, parsley, mint, and red pepper flakes (if using). Season with salt and pepper to taste.
- Transfer to a serving dish and serve hot.
