Ingredients:

  • 1.5 lbs (680g) medium zucchini, sliced into 1/4-inch (0.6cm) thick rounds
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh mint
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Wash and slice the zucchini into uniform rounds.
  2. Heat olive oil in the skillet over medium-high heat until shimmering.
  3. Add zucchini slices in a single layer (work in batches if necessary). Cook until golden brown on one side, then flip and cook until tender and browned on the other side (about 3-5 minutes per side).
  4. Reduce heat to medium. Add minced garlic and cook until fragrant (about 30 seconds).
  5. Remove from heat. Stir in lemon juice, parsley, mint, and red pepper flakes (if using). Season with salt and pepper to taste.
  6. Transfer to a serving dish and serve hot.
