Ingredients:

  • 1-2 pounds (450-900g) Salmon Fillets, skin on or off, about 1-1.5 inch thick
  • 1 tablespoon (15ml) Olive Oil
  • 1 Lemon (for slicing and juicing)
  • 2 tablespoons (chopped) Fresh Dill, optional
  • 1/2 teaspoon (2.5ml) Garlic Powder
  • 1/4 teaspoon (1.25ml) Salt
  • 1/4 teaspoon (1.25ml) Black Pepper

Instructions:

  1. Pat the salmon fillets dry with paper towels. This helps with browning.
  2. In a small bowl, whisk together olive oil, lemon juice (about 1-2 tablespoons), garlic powder, salt, pepper, and dill (if using).
  3. Place salmon fillets on a baking sheet lined with parchment paper (or lightly greased). Drizzle the marinade over the salmon, ensuring it's evenly coated.
  4. Arrange thin lemon slices on top of the salmon fillets (optional).
  5. Preheat oven to 375°F (190°C). Bake for 12-18 minutes, or until the internal temperature reaches 145°F (63°C). Check for doneness using an instant-read thermometer inserted into the thickest part of the fillet.
  6. Let the salmon rest for a couple of minutes before serving. Garnish with fresh dill or lemon wedges, if desired.
