Ingredients:
- 4 (6-ounce/170g) salmon fillets, skin on or off
- 2 tablespoons olive oil (30 ml)
- 1 lemon, juiced (about 2 tablespoons juice/30ml) and zested (about 1 teaspoon zest)
- 2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill) (30ml)
- 1 clove garlic, minced
- 1/2 teaspoon sea salt (2.5 ml)
- 1/4 teaspoon black pepper (1.25 ml)
- Optional: Lemon slices for garnish
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
- In a small bowl, combine olive oil, lemon juice, lemon zest, dill, minced garlic, salt, and pepper. Whisk until well combined.
- Place the salmon fillets on the prepared baking sheet. Drizzle the marinade evenly over the salmon, ensuring each fillet is well coated.
- Bake for 12-15 minutes, or until the salmon is cooked through. Check for doneness: The salmon should flake easily with a fork. An internal temperature of 145°F (63°C) is ideal.
- Let the salmon rest for a few minutes before serving. Garnish with lemon slices, if desired.
