Ingredients:

  • 4 (6-ounce/170g) salmon fillets, skin on or off
  • 2 tablespoons olive oil (30 ml)
  • 1 lemon, juiced (about 2 tablespoons juice/30ml) and zested (about 1 teaspoon zest)
  • 2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill) (30ml)
  • 1 clove garlic, minced
  • 1/2 teaspoon sea salt (2.5 ml)
  • 1/4 teaspoon black pepper (1.25 ml)
  • Optional: Lemon slices for garnish

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. In a small bowl, combine olive oil, lemon juice, lemon zest, dill, minced garlic, salt, and pepper. Whisk until well combined.
  3. Place the salmon fillets on the prepared baking sheet. Drizzle the marinade evenly over the salmon, ensuring each fillet is well coated.
  4. Bake for 12-15 minutes, or until the salmon is cooked through. Check for doneness: The salmon should flake easily with a fork. An internal temperature of 145°F (63°C) is ideal.
  5. Let the salmon rest for a few minutes before serving. Garnish with lemon slices, if desired.
