Ingredients:

  • 2 (6-ounce/170g) salmon fillets, skin on or off
  • 1 tablespoon olive oil (15ml)
  • 1 lemon, thinly sliced (save juice from the ends)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill) (15ml or 5ml)
  • 1/2 teaspoon garlic powder (2.5ml)
  • 1/4 teaspoon salt (1.25ml)
  • 1/4 teaspoon black pepper (1.25ml)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil.
  3. Pat the salmon fillets dry with paper towels. Place salmon on the prepared baking sheet.
  4. In a small bowl, whisk together the olive oil, chopped dill, garlic powder, salt, and pepper. Brush the mixture evenly over the salmon fillets.
  5. Arrange lemon slices on top of the salmon fillets. Squeeze any leftover lemon juice from the cut ends of the lemon over the salmon.
  6. Bake in the preheated oven for 12-18 minutes, or until the salmon is cooked through. The salmon is done when it flakes easily with a fork or reaches an internal temperature of 145°F (63°C) when measured with an instant-read thermometer.
  7. Serve immediately and enjoy.
