Ingredients:

  • 2 (6-ounce/170g) salmon fillets, skin on or off, about 1 inch thick
  • 1 tablespoon/15 ml olive oil
  • 1 tablespoon/15 ml lemon juice
  • 1 teaspoon/5 ml Dijon mustard
  • 1/2 teaspoon/2.5 ml garlic powder
  • 1/4 teaspoon/1.25 ml paprika
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Position oven rack about 6 inches (15 cm) from the broiler. Preheat broiler on high.
  2. Pat salmon fillets dry with paper towels. This helps with browning.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, paprika, salt, and pepper.
  4. Place salmon fillets on the broiler pan. Brush generously with the marinade.
  5. Broil for 6-8 minutes, or until salmon is cooked through and flakes easily with a fork. Watch carefully to prevent burning – every broiler is different! The internal temperature should reach 145°F (63°C).
  6. Remove from oven and let rest for a minute or two. Serve immediately.
