Ingredients:
- 2 (6-ounce/170g) salmon fillets, skin on or off, about 1 inch thick
- 1 tablespoon/15 ml olive oil
- 1 tablespoon/15 ml lemon juice
- 1 teaspoon/5 ml Dijon mustard
- 1/2 teaspoon/2.5 ml garlic powder
- 1/4 teaspoon/1.25 ml paprika
- Salt and freshly ground black pepper to taste
Instructions:
- Position oven rack about 6 inches (15 cm) from the broiler. Preheat broiler on high.
- Pat salmon fillets dry with paper towels. This helps with browning.
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, garlic powder, paprika, salt, and pepper.
- Place salmon fillets on the broiler pan. Brush generously with the marinade.
- Broil for 6-8 minutes, or until salmon is cooked through and flakes easily with a fork. Watch carefully to prevent burning – every broiler is different! The internal temperature should reach 145°F (63°C).
- Remove from oven and let rest for a minute or two. Serve immediately.
