Ingredients:
- 2 (6-8 ounce) cod fillets, skinless (approximately 170-225g each)
- 1 tablespoon olive oil (15 ml)
- 1/2 teaspoon sea salt (2.5ml)
- 1/4 teaspoon black pepper (1.25ml)
- 1/2 teaspoon paprika (2.5ml)
- 1/4 teaspoon garlic powder (1.25ml)
- 1/2 cup all-purpose flour (60g)
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs (25g)
- 1 tablespoon grated parmesan cheese (optional) (7g)
- Lemon wedges
- Tartar Sauce
Instructions:
- Prep the Fish: Pat the cod fillets dry with paper towels. This is crucial for achieving crispiness. Lightly oil the fish and season with salt, pepper, paprika, and garlic powder.
- Set up the Breading Station: Place flour in one shallow bowl, beaten egg in another, and panko breadcrumbs (mixed with parmesan cheese, if using) in a third.
- Bread the Fish: Dredge each fillet in flour, then dip in the beaten egg, and finally coat thoroughly with panko breadcrumbs, pressing gently to ensure they adhere.
- Air Fry: Preheat your air fryer to 400°F (200°C) if your model requires it. Place the breaded fish fillets in the air fryer basket in a single layer, ensuring they aren't overcrowded. If necessary, cook in batches.
- Cook to Perfection: Air fry for 10-12 minutes, flipping halfway through, until the fish is golden brown and cooked through. The internal temperature should reach 145°F (63°C).
- Serve Immediately: Serve the crispy air fryer fish hot, with lemon wedges and tartar sauce (or your favorite dipping sauce).
