Ingredients:
- 2 medium zucchini (about 1 lb / 450g), washed and trimmed
- 2 tablespoons olive oil (30ml)
- 2 cloves garlic, minced (approx. 2 tsp minced)
- 1 teaspoon dried Italian herbs (or a mix of oregano, basil, thyme) (5ml)
- 1/2 teaspoon salt (2.5ml)
- 1/4 teaspoon black pepper (1.25ml)
- Optional: Red pepper flakes for a little kick
Instructions:
- Preheat oven to 400°F (200°C).
- Cut the zucchini into ½-inch thick rounds or half-moons.
- In a large bowl, toss the zucchini with olive oil, minced garlic, Italian herbs, salt, and pepper. Ensure the zucchini is evenly coated.
- Spread the zucchini in a single layer on a baking sheet. Avoid overcrowding.
- Roast for 20-25 minutes, flipping halfway through, until the zucchini is tender and golden brown around the edges.
- Serve immediately and enjoy!
