Ingredients:

  • 2 lbs (900g) baby potatoes
  • 3 tablespoons (45 ml) olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 2 tablespoons (30g) fresh parsley, chopped
  • Optional: lemon wedges for serving

Instructions:

  1. Wash and scrub the baby potatoes under cool water. Cut larger potatoes in half for even cooking; leave smaller ones whole.
  2. In a large mixing bowl, add the potatoes, olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Toss well until potatoes are evenly coated.
  3. Preheat your grill to medium-high heat (around 400°F/200°C). If using skewers, thread half the potatoes on skewers for easier grilling.
  4. Arrange potatoes on the grill grate (or on skewers). Grill for 25-30 minutes, turning them every 5-7 minutes until tender and crispy.
  5. Test with a fork; potatoes should be tender but not mushy, with a slight crispy exterior.
  6. Remove from grill and sprinkle with chopped parsley. Squeeze fresh lemon juice over the top before serving, and enjoy!
