Ingredients:
- 2 lbs (900g) baby potatoes
- 3 tablespoons (45 ml) olive oil
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 2 tablespoons (30g) fresh parsley, chopped
- Optional: lemon wedges for serving
Instructions:
- Wash and scrub the baby potatoes under cool water. Cut larger potatoes in half for even cooking; leave smaller ones whole.
- In a large mixing bowl, add the potatoes, olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Toss well until potatoes are evenly coated.
- Preheat your grill to medium-high heat (around 400°F/200°C). If using skewers, thread half the potatoes on skewers for easier grilling.
- Arrange potatoes on the grill grate (or on skewers). Grill for 25-30 minutes, turning them every 5-7 minutes until tender and crispy.
- Test with a fork; potatoes should be tender but not mushy, with a slight crispy exterior.
- Remove from grill and sprinkle with chopped parsley. Squeeze fresh lemon juice over the top before serving, and enjoy!
