Ingredients:

  • 1.5 lbs (680g) large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup (60ml) olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. In a mixing bowl, whisk together garlic, olive oil, lemon juice, smoked paprika, chili flakes, salt, and pepper. Stir in parsley if using.
  2. Add the shrimp to the marinade, tossing to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 2 hours) for best flavor.
  3. Preheat your grill to medium-high heat (around 375-400°F or 190-205°C). Clean the grill grates and lightly oil them.
  4. Thread the shrimp onto skewers (optional).
  5. Place the shrimp on the preheated grill. Cook for 2-3 minutes per side, or until the shrimp turn pink and opaque.
  6. Remove the shrimp from the grill and serve immediately.
