Ingredients:

  • 1 large head of broccoli (about 1 ½ lbs / 680g), cut into florets
  • 2 tablespoons olive oil (30ml)
  • ½ teaspoon kosher salt (2.5ml) (or to taste)
  • ¼ teaspoon black pepper (1.2ml) (or to taste)
  • Optional: 1 clove garlic, minced (for a garlicky flavour)
  • Optional: Red pepper flakes (a pinch, for a bit of heat)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the broccoli: Wash and dry the broccoli florets thoroughly. Pat them dry with paper towels to ensure they crisp up in the oven.
  3. Season the broccoli: In a large bowl, toss the broccoli florets with olive oil, salt, pepper, and optional garlic and red pepper flakes. Make sure each floret is coated evenly.
  4. Arrange on baking sheet: Spread the broccoli in a single layer on the baking sheet. Avoid overcrowding to prevent steaming.
  5. Bake: Bake for 20-25 minutes, or until the broccoli is tender-crisp and lightly browned, even slightly charred on the edges (that's where the good flavour is!). Flip the florets halfway through baking for even cooking.
  6. Serve: Remove from oven and serve immediately.
