Ingredients:
- 2 large sweet potatoes (about 1.5 lbs / 680g total), peeled and cut into 1-inch cubes
- 2 tablespoons olive oil (30ml)
- 1 teaspoon salt (5g)
- 1/2 teaspoon black pepper (2.5g)
- 1/2 teaspoon garlic powder (2.5g)
- 1/4 teaspoon smoked paprika (1.25g) (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Peel and cube the sweet potatoes into roughly 1-inch pieces.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, and smoked paprika (if using). Ensure each piece is coated.
- Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper (if using). Avoid overcrowding.
- Roast in the preheated oven for 30-40 minutes, or until tender and slightly caramelized. Flip the potatoes halfway through cooking for even browning.
- Remove from the oven and serve immediately.
