Ingredients:

  • 1 pound (450g) thinly sliced steak (ribeye or sirloin preferred)
  • 1 tablespoon (15 ml) olive oil
  • 1 medium yellow onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1/2 red bell pepper, thinly sliced
  • 1 teaspoon (5g) Worcestershire sauce
  • 1/2 teaspoon (2.5g) garlic powder
  • 1/4 teaspoon (1.25g) black pepper
  • Salt to taste
  • 4 slices sourdough bread (or your favorite sturdy bread)
  • 4 tablespoons (56g) unsalted butter, softened
  • 8 ounces (225g) provolone cheese, sliced (or your favorite cheese)
  • Optional: cheese whiz or pepper jack for extra flavor

Instructions:

  1. Slice steak thinly if needed. Slice onions and bell peppers.
  2. Heat olive oil in a large skillet over medium heat. Add onions and peppers; cook until softened and slightly caramelized (about 8-10 minutes). Season with salt and pepper. Remove from skillet and set aside.
  3. In the same skillet, increase heat to medium-high. Add steak in a single layer (work in batches if needed). Cook until browned and cooked through (about 2-3 minutes per side).
  4. Return the sautéed vegetables to the skillet with the steak. Add Worcestershire sauce, garlic powder, and pepper. Toss to combine and heat through. Adjust seasoning to taste.
  5. Spread softened butter evenly on one side of each slice of bread. Place two slices of bread, butter-side down, in a grill pan or frying pan.
  6. Evenly distribute provolone cheese (and optional cheese whiz/pepper jack) on the bread slices.
  7. Top the cheese with the cheesesteak mixture, dividing evenly between the two sandwiches.
  8. Top the cheesesteak filling with more cheese, then top with the remaining slices of bread, butter-side up.
  9. Grill over medium heat, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted and gooey (about 3-4 minutes per side). For the oven version: Place the sandwiches on a baking sheet in a preheated oven at 350°F (175°C) for about 5-7 minutes per side, or until golden brown and cheese is melted.
  10. Cut the Philly cheesesteak grilled cheese Cheesesteak sandwiches in half and serve immediately.
