Ingredients:

  • 1 pound (450g) fresh spinach, thoroughly washed
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced (approx. 1 teaspoon)
  • ¼ teaspoon red pepper flakes (optional, for a little kick)
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Wash the spinach thoroughly in a colander or salad spinner and remove any thick stems.
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds, or until fragrant, being careful not to burn the garlic.
  3. Add the spinach to the skillet. It will seem like a lot at first, but it will quickly wilt down.
  4. Cook, stirring occasionally, until the spinach is wilted and tender, about 3-4 minutes.
  5. Remove the skillet from the heat. Stir in the lemon juice, salt, and pepper. Taste and adjust seasonings as needed. Serve immediately.
