Ingredients:

  • 2 cups (240g) Almond Flour, finely ground
  • 1/2 cup (approx. 60g) Whey Protein Powder, unflavored or vanilla
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1/4 cup (57g) Unsalted Butter, cold and cut into cubes
  • 1 cup (113g) Cheddar Cheese, shredded
  • 3/4 cup (180ml) Milk (dairy or non-dairy), cold
  • 1 tablespoon Everything Bagel Seasoning, for topping (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the almond flour, protein powder, baking powder, and salt.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry blender (or your fingers) to cut the butter into the flour mixture until it resembles coarse crumbs. A food processor can also be used - pulse gently!
  4. Stir in the shredded cheddar cheese. Then, pour in the cold milk and mix until just combined. Don't overmix! The dough will be slightly sticky.
  5. Turn the dough out onto a lightly floured surface (using almond flour). Gently pat the dough into a circle about 1 inch (2.5 cm) thick. Use a cookie cutter or a knife to cut out biscuit shapes.
  6. Place the biscuits onto the prepared baking sheet, leaving a little space between each one.
  7. Brush the tops of the biscuits with a little extra milk or melted butter. Sprinkle with Everything Bagel Seasoning, if desired.
  8. Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
  9. Let the biscuits cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely (or serve warm, because who can resist?).
