Ingredients:
- 2 cups (240g) Almond Flour, finely ground
- 1/2 cup (approx. 60g) Whey Protein Powder, unflavored or vanilla
- 2 teaspoons Baking Powder
- 1/2 teaspoon Salt
- 1/4 cup (57g) Unsalted Butter, cold and cut into cubes
- 1 cup (113g) Cheddar Cheese, shredded
- 3/4 cup (180ml) Milk (dairy or non-dairy), cold
- 1 tablespoon Everything Bagel Seasoning, for topping (optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, whisk together the almond flour, protein powder, baking powder, and salt.
- Add the cold, cubed butter to the dry ingredients. Use a pastry blender (or your fingers) to cut the butter into the flour mixture until it resembles coarse crumbs. A food processor can also be used - pulse gently!
- Stir in the shredded cheddar cheese. Then, pour in the cold milk and mix until just combined. Don't overmix! The dough will be slightly sticky.
- Turn the dough out onto a lightly floured surface (using almond flour). Gently pat the dough into a circle about 1 inch (2.5 cm) thick. Use a cookie cutter or a knife to cut out biscuit shapes.
- Place the biscuits onto the prepared baking sheet, leaving a little space between each one.
- Brush the tops of the biscuits with a little extra milk or melted butter. Sprinkle with Everything Bagel Seasoning, if desired.
- Bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.
- Let the biscuits cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely (or serve warm, because who can resist?).
