Ingredients:

  • 8 oz (227 g) soba noodles
  • 1 tablespoon (15 ml) sesame oil
  • Zest of 1 large orange
  • Juice of 1 large orange (about 1/3 cup or 80 ml)
  • Zest of 1 lime
  • Juice of 1 lime (about 2 tablespoons or 30 ml)
  • 2 tablespoons (30 ml) soy sauce
  • 1 tablespoon (15 ml) honey or agave syrup (or to taste)
  • 1 teaspoon (5 ml) grated ginger
  • 1 cup (150 g) shredded carrots
  • 1 cup (150 g) thinly sliced bell peppers (mixed colors)
  • 1/2 cup (15 g) chopped fresh cilantro or parsley
  • 2 green onions, thinly sliced
  • Crushed red pepper flakes (optional)

Instructions:

  1. Boil a pot of salted water.
  2. Add soba noodles and cook according to package directions until al dente.
  3. Drain in a colander and rinse under cold water until chilled.
  4. In a mixing bowl, combine orange zest, orange juice, lime zest, lime juice, soy sauce, honey, and grated ginger.
  5. Whisk until well mixed and smooth.
  6. In a large bowl, toss the cooked soba noodles with sesame oil.
  7. Add the shredded carrots and sliced bell peppers.
  8. Drizzle with the citrus dressing and toss until well coated.
  9. Stir in fresh herbs and green onions.
  10. Serve in bowls, topped with crushed red pepper flakes if desired.
