Ingredients:
- 8 oz (227 g) soba noodles
- 1 tablespoon (15 ml) sesame oil
- Zest of 1 large orange
- Juice of 1 large orange (about 1/3 cup or 80 ml)
- Zest of 1 lime
- Juice of 1 lime (about 2 tablespoons or 30 ml)
- 2 tablespoons (30 ml) soy sauce
- 1 tablespoon (15 ml) honey or agave syrup (or to taste)
- 1 teaspoon (5 ml) grated ginger
- 1 cup (150 g) shredded carrots
- 1 cup (150 g) thinly sliced bell peppers (mixed colors)
- 1/2 cup (15 g) chopped fresh cilantro or parsley
- 2 green onions, thinly sliced
- Crushed red pepper flakes (optional)
Instructions:
- Boil a pot of salted water.
- Add soba noodles and cook according to package directions until al dente.
- Drain in a colander and rinse under cold water until chilled.
- In a mixing bowl, combine orange zest, orange juice, lime zest, lime juice, soy sauce, honey, and grated ginger.
- Whisk until well mixed and smooth.
- In a large bowl, toss the cooked soba noodles with sesame oil.
- Add the shredded carrots and sliced bell peppers.
- Drizzle with the citrus dressing and toss until well coated.
- Stir in fresh herbs and green onions.
- Serve in bowls, topped with crushed red pepper flakes if desired.
