  • 2 Tbsp Granulated or Caster Sugar
  • 1 tsp Fresh Lemon Juice
  • 8 Digestive Biscuits or Shortbread, crushed
  • 1 ½ cups Heavy Whipping Cream (35% fat minimum), chilled
  • ¼ cup Icing (Confectioners') Sugar, sifted
  • 1 tsp Pure Vanilla Extract

Instructions:

  1. Macerate the Strawberries: Place the sliced strawberries, granulated sugar, and lemon juice into a medium bowl. Gently toss, cover, and allow the mixture to sit at room temperature for 30 minutes. This creates a sweet strawberry syrup.
  2. Prepare the Crumb: Crush the biscuits into a mixture of fine powder and coarse chunks. Reserve the crumb mixture for assembly.
  3. Whip the Vanilla Cream: Pour the cold heavy cream into a chilled mixing bowl. Begin whisking, gradually increasing speed. Once the cream starts to thicken (about 2 minutes), add the sifted icing sugar and vanilla extract. Continue whipping until the cream holds firm, medium-stiff peaks.
  4. Assemble Layer 1: Place a generous spoonful of macerated strawberries (including some syrup) at the bottom of each of the four parfait glasses. This should use approximately one-third of the fruit mixture.
  5. Assemble Layers 2 and 3: Sprinkle a spoonful of the crunchy biscuit crumb over the strawberry layer. Follow this with a generous dollop of the vanilla whipped cream.
  6. Repeat and Finish: Repeat the layering process (Strawberries, Crumb, Cream) until the glasses are full, ensuring the final layer is a generous dollop of cream. Garnish with a whole strawberry or a sprinkle of crumb. Chill for 10-15 minutes before serving cold.
