Ingredients:
- 1 cup (120g) chopped carrots
- 1/2 cup (75g) frozen banana slices
- 1/2 cup (120ml) unsweetened almond milk or coconut milk
- 1/4 cup (60g) plain Greek yogurt (optional)
- 1 tablespoon (15ml) orange juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- Pinch of ground nutmeg
- 1 tablespoon (15ml) maple syrup or honey (optional)
- 2 ice cubes (optional)
Instructions:
- Chop the carrots into smaller pieces. Measure out all remaining ingredients.
- Add all ingredients (carrots, banana, almond milk/coconut milk, yogurt (if using), orange juice, spices, maple syrup/honey (if using), and ice cubes (if using)) to a high-speed blender.
- Blend on high speed until the smoothie is completely smooth and creamy, about 30-60 seconds. Scrape down the sides of the blender if needed.
- Taste the smoothie and add more maple syrup/honey if desired for sweetness, or a splash more almond milk for a thinner consistency.
- Pour the smoothie into a glass and garnish with chopped walnuts, shredded coconut, or a dusting of cinnamon, if desired. Serve immediately.
