Ingredients:
- 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 680g)
- 2 tablespoons Baharat spice blend (or homemade blend)
- 3 tablespoons olive oil (45ml)
- 2 cloves garlic, minced
- 1 teaspoon salt (5g)
- 1 teaspoon black pepper (5g)
- Juice of 2 medium sweet mandarins (about 1/2 cup / 120ml)
- Zest of 1 medium sweet mandarin
- 2 large sweet mandarins, cut into wedges
- Fresh herbs for garnish (e.g., cilantro or parsley)
Instructions:
- In a mixing bowl, combine Baharat spice blend, olive oil, minced garlic, salt, pepper, mandarin juice, and zest.
- Add chicken thighs to the marinade
- Preheat oven to 400°F (200°C).
- Place marinated chicken thighs skin-side up in a baking dish. Scatter mandarin wedges around the chicken.
- Place in the oven and roast for 40-50 minutes until the chicken skin is golden brown and crispy and an internal temperature of 165°F (74°C) is reached. Use a meat thermometer for accuracy.
- Allow the chicken to rest for 5-10 minutes before serving. Garnish with fresh herbs.
