Ingredients:
- 1 whole Black Sexlink chicken (about 4-5 pounds / 1.8-2.3 kg)
- 1 tablespoon kosher salt (15 g)
- 1 teaspoon black pepper (5 g)
- 1 tablespoon olive oil (15 ml)
- 1/2 cup unsalted butter, softened (113 g)
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (30 ml)
- 1 tablespoon fresh rosemary, chopped (15 ml)
- 1 tablespoon fresh thyme, chopped (15 ml)
- Zest of 1 lemon
- Juice of 1/2 lemon
Instructions:
- Pat the chicken dry with paper towels and season the cavity and exterior with salt and pepper.
- In a mixing bowl, combine softened butter, minced garlic, herbs, lemon zest, and lemon juice. Mix until well combined.
- Gently lift the skin over the chicken breast and spread half of the herb garlic butter underneath. Rub the remaining butter all over the exterior of the chicken.
- (Optional) Tie the legs together with cooking twine and preheat the oven to 375°F (190°C).
- Place the chicken in a roasting pan and drizzle with olive oil. Roast for approximately 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute.
