Ingredients:

  • 1 whole Black Sexlink chicken (about 4-5 pounds / 1.8-2.3 kg)
  • 1 tablespoon kosher salt (15 g)
  • 1 teaspoon black pepper (5 g)
  • 1 tablespoon olive oil (15 ml)
  • 1/2 cup unsalted butter, softened (113 g)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (30 ml)
  • 1 tablespoon fresh rosemary, chopped (15 ml)
  • 1 tablespoon fresh thyme, chopped (15 ml)
  • Zest of 1 lemon
  • Juice of 1/2 lemon

Instructions:

  1. Pat the chicken dry with paper towels and season the cavity and exterior with salt and pepper.
  2. In a mixing bowl, combine softened butter, minced garlic, herbs, lemon zest, and lemon juice. Mix until well combined.
  3. Gently lift the skin over the chicken breast and spread half of the herb garlic butter underneath. Rub the remaining butter all over the exterior of the chicken.
  4. (Optional) Tie the legs together with cooking twine and preheat the oven to 375°F (190°C).
  5. Place the chicken in a roasting pan and drizzle with olive oil. Roast for approximately 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute.
