Ingredients:
- 1 medium butternut squash (about 2 lbs / 900g), peeled, seeded, and cubed into 1-inch pieces
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons pure maple syrup
- 1 tablespoon unsalted butter
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg (optional)
- Pinch of cayenne pepper (optional)
- 1 tablespoon of pumpkin seeds (optional)
Instructions:
- Peel, seed, and cube the butternut squash into roughly 1-inch pieces.
- In a large bowl, toss the squash cubes with olive oil, salt, and pepper.
- Spread the squash cubes in a single layer on a baking sheet lined with parchment paper (if using).
- Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, or until the squash is tender and slightly caramelized, turning halfway through.
- While the squash is baking, combine maple syrup, butter, cinnamon, nutmeg (if using), and cayenne (if using) in a small saucepan.
- Cook over medium heat, stirring occasionally, until the butter is melted and the glaze is smooth and slightly thickened, about 2-3 minutes.
- Remove the squash from the oven and transfer it to a clean bowl. Pour the maple-cinnamon glaze over the squash and toss gently to coat.
