Ingredients:

  • 2 (15 oz) cans of chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • ¼ teaspoon black pepper
  • ¼ cup honey
  • 1 tablespoon sriracha sauce
  • 1 teaspoon apple cider vinegar
  • 1 clove garlic, minced

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Drain and rinse the chickpeas. Pat dry with a paper towel to ensure they roast properly.
  3. In a mixing bowl, combine the chickpeas, olive oil, salt, smoked paprika, cumin, and black pepper. Toss until chickpeas are evenly coated.
  4. Spread the chickpeas on a lined baking sheet in a single layer.
  5. Roast in the preheated oven for 20-30 minutes, shaking the pan halfway through, until golden brown and crispy.
  6. While the chickpeas are roasting, whisk together the honey, sriracha, apple cider vinegar, and garlic in a small bowl.
  7. Once the chickpeas are roasted, remove them from the oven and immediately drizzle the spicy honey glaze over them. Toss to coat well.
  8. Return the glazed chickpeas to the oven for an additional 5-10 minutes until the glaze has caramelized.
  9. Allow the chickpeas to cool slightly before serving.
