Ingredients:
- 2 (15 oz) cans of chickpeas, drained and rinsed
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon smoked paprika
- ¼ teaspoon ground cumin
- ¼ teaspoon black pepper
- ¼ cup honey
- 1 tablespoon sriracha sauce
- 1 teaspoon apple cider vinegar
- 1 clove garlic, minced
Instructions:
- Preheat your oven to 400°F (200°C).
- Drain and rinse the chickpeas. Pat dry with a paper towel to ensure they roast properly.
- In a mixing bowl, combine the chickpeas, olive oil, salt, smoked paprika, cumin, and black pepper. Toss until chickpeas are evenly coated.
- Spread the chickpeas on a lined baking sheet in a single layer.
- Roast in the preheated oven for 20-30 minutes, shaking the pan halfway through, until golden brown and crispy.
- While the chickpeas are roasting, whisk together the honey, sriracha, apple cider vinegar, and garlic in a small bowl.
- Once the chickpeas are roasted, remove them from the oven and immediately drizzle the spicy honey glaze over them. Toss to coat well.
- Return the glazed chickpeas to the oven for an additional 5-10 minutes until the glaze has caramelized.
- Allow the chickpeas to cool slightly before serving.
