Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 3 cloves (15g) garlic, minced into a paste
  • 2 tbsp (8g) fresh parsley, finely chopped
  • 1 tbsp (4g) fresh chives, finely chopped
  • ½ tsp (3g) kosher salt
  • ¼ tsp (1g) cracked black pepper
  • 1 tsp (5ml) fresh lemon juice

Instructions:

  1. Place softened butter in a mixing bowl and use a rubber spatula to fold in the minced garlic, chopped parsley, chopped chives, salt, pepper, and lemon juice until the mixture is a uniform pale green color.
  2. Lay a 12x12 inch square of plastic wrap on a flat surface. Spoon the butter into the center and shape it into a rectangle approximately 6 inches long.
  3. Fold one side of the plastic over the butter and roll tightly into a cylinder. Twist the ends firmly like a candy wrapper to compress the butter and remove air gaps.
  4. Refrigerate the log for at least 1 hour until firm to the touch.
  5. Peel back the plastic wrap and use a sharp knife to cut into 1/2-inch thick discs.
