Ingredients:
- 1 cup (150g) fresh blueberries
- 1/4 cup (60ml) fresh lime juice
- 2 tablespoons (30ml) honey
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
Instructions:
- In a blender or food processor, combine blueberries, lime juice, honey, olive oil, garlic, cumin, salt, and pepper. Blend until smooth.
- Place chicken breasts in a zip-top bag or shallow dish. Pour the blueberry marinade over the chicken, ensuring it is well coated. Seal or cover and refrigerate for 30 minutes.
- Preheat the grill to medium-high or the oven to 375°F (190°C).
- Remove the chicken from the marinade, allowing excess to drip off. For grilling: Cook for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). For baking: Place on a baking sheet and bake for 25-30 minutes, or until cooked through.
- Let the chicken rest for 5 minutes before slicing. Garnish with lime wedges and cilantro if desired.
