Ingredients:

  • 1 cup (150g) fresh blueberries
  • 1/4 cup (60ml) fresh lime juice
  • 2 tablespoons (30ml) honey
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)

Instructions:

  1. In a blender or food processor, combine blueberries, lime juice, honey, olive oil, garlic, cumin, salt, and pepper. Blend until smooth.
  2. Place chicken breasts in a zip-top bag or shallow dish. Pour the blueberry marinade over the chicken, ensuring it is well coated. Seal or cover and refrigerate for 30 minutes.
  3. Preheat the grill to medium-high or the oven to 375°F (190°C).
  4. Remove the chicken from the marinade, allowing excess to drip off. For grilling: Cook for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). For baking: Place on a baking sheet and bake for 25-30 minutes, or until cooked through.
  5. Let the chicken rest for 5 minutes before slicing. Garnish with lime wedges and cilantro if desired.
