Ingredients:

  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 1 teaspoon (5g) baking powder
  • ½ teaspoon (3g) salt
  • ½ cup (113g) cold unsalted butter, cubed
  • ¾ cup (177ml) cold milk
  • 1 pound (454g) breakfast sausage, removed from casings
  • 6 large eggs
  • 2 tablespoons (30ml) milk or cream
  • Salt and freshly ground black pepper, to taste
  • 1 cup (113g) shredded cheddar cheese
  • 1 large egg
  • 1 tablespoon milk

Instructions:

  1. Prepare the Dough: Whisk dry ingredients, cut in butter, add milk to form dough, chill.
  2. Cook the Sausage: Brown sausage in skillet, drain excess fat, set aside.
  3. Scramble the Eggs: Whisk eggs with milk, salt, and pepper. Cook in same skillet, until just set but still slightly moist.
  4. Assemble the Roll-Ups: Roll out dough, cut into squares. Top each square with sausage, eggs, and cheese. Roll up tightly.
  5. Prepare Egg Wash: Whisk egg and milk together.
  6. Brush & Bake: Brush roll-ups with egg wash. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.
