Ingredients:
- 2 cups (250g) all-purpose flour, plus extra for dusting
- 1 teaspoon (5g) baking powder
- ½ teaspoon (3g) salt
- ½ cup (113g) cold unsalted butter, cubed
- ¾ cup (177ml) cold milk
- 1 pound (454g) breakfast sausage, removed from casings
- 6 large eggs
- 2 tablespoons (30ml) milk or cream
- Salt and freshly ground black pepper, to taste
- 1 cup (113g) shredded cheddar cheese
- 1 large egg
- 1 tablespoon milk
Instructions:
- Prepare the Dough: Whisk dry ingredients, cut in butter, add milk to form dough, chill.
- Cook the Sausage: Brown sausage in skillet, drain excess fat, set aside.
- Scramble the Eggs: Whisk eggs with milk, salt, and pepper. Cook in same skillet, until just set but still slightly moist.
- Assemble the Roll-Ups: Roll out dough, cut into squares. Top each square with sausage, eggs, and cheese. Roll up tightly.
- Prepare Egg Wash: Whisk egg and milk together.
- Brush & Bake: Brush roll-ups with egg wash. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.
