Ingredients:
- 1 pound (450g) broccolini, trimmed
- 2 tablespoons (30ml) olive oil
- 3 cloves garlic, thinly sliced
- 1 teaspoon (5ml) lemon zest (from 1 lemon)
- 1 tablespoon (15ml) lemon juice (freshly squeezed)
- Salt and pepper to taste
Instructions:
- Rinse the broccolini under cold water and pat dry. Trim the tough ends of the stems to ensure tenderness.
- In a large skillet over medium heat, add the olive oil. Allow it to warm for about 1 minute until shimmering.
- Add the sliced garlic to the skillet. Cook for 1-2 minutes until fragrant but not browned.
- Add the prepared broccolini to the skillet. Toss to coat in the oil and garlic. Sauté for 3-5 minutes until bright green and tender-crisp.
- Stir in the lemon zest and juice. Season with salt and pepper, tossing to combine.
- Transfer to a serving dish and enjoy immediately.
