Ingredients:

  • 1 pound (450g) broccolini, trimmed
  • 2 tablespoons (30ml) olive oil
  • 3 cloves garlic, thinly sliced
  • 1 teaspoon (5ml) lemon zest (from 1 lemon)
  • 1 tablespoon (15ml) lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions:

  1. Rinse the broccolini under cold water and pat dry. Trim the tough ends of the stems to ensure tenderness.
  2. In a large skillet over medium heat, add the olive oil. Allow it to warm for about 1 minute until shimmering.
  3. Add the sliced garlic to the skillet. Cook for 1-2 minutes until fragrant but not browned.
  4. Add the prepared broccolini to the skillet. Toss to coat in the oil and garlic. Sauté for 3-5 minutes until bright green and tender-crisp.
  5. Stir in the lemon zest and juice. Season with salt and pepper, tossing to combine.
  6. Transfer to a serving dish and enjoy immediately.
