Ingredients:
- 1 lb boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 8 slices whole grain bread
- 4 large leaves romaine lettuce
- 2 medium tomatoes, sliced
- 1 avocado, sliced
- 8 slices bacon, cooked until crispy
- 1/2 cup mayonnaise
- 1 tablespoon sriracha sauce (optional for spice)
Instructions:
- In a mixing bowl, combine olive oil, soy sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Add chicken breasts and coat well; let marinate for at least 15 minutes.
- Heat the grill or grill pan over medium-high heat. Grill chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F (74°C). Remove from heat and allow resting for 5 minutes, then slice thinly.
- Toast the slices of whole grain bread until golden brown.
- Spread a layer of mayonnaise (mixed with sriracha if using) on one side of each slice of toast. Layer lettuce, sliced chicken, bacon, tomato, and avocado on four slices. Top with the remaining slices of bread, mayo side down.
- Cut sandwiches in half diagonally and serve immediately.
