- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika

- 1 large head of cauliflower (about 2 pounds)
- Fresh herbs (such as parsley or basil) for garnish
Instructions:
- Combine olive oil, balsamic vinegar, minced garlic, Dijon mustard, oregano, smoked paprika, salt, and pepper in a large mixing bowl.
- Remove the leaves from the cauliflower head and trim the stem. Slice the cauliflower into 1-inch thick steaks (aim for 2-3 steaks).
- Brush the cauliflower steaks with the marinade on both sides. Let them sit for at least 10 minutes for flavor absorption.
- Heat the grill to medium-high. Ensure the grates are clean and lightly oiled.
- Place the steaks on the grill and cook for 5-7 minutes per side or until grill marks appear and they're tender (not mushy).
- Garnish with fresh herbs and drizzle with any remaining marinade before serving.
