Ingredients:

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 large head of cauliflower (about 2 pounds)
  • Fresh herbs (such as parsley or basil) for garnish

Instructions:

  1. Combine olive oil, balsamic vinegar, minced garlic, Dijon mustard, oregano, smoked paprika, salt, and pepper in a large mixing bowl.
  2. Remove the leaves from the cauliflower head and trim the stem. Slice the cauliflower into 1-inch thick steaks (aim for 2-3 steaks).
  3. Brush the cauliflower steaks with the marinade on both sides. Let them sit for at least 10 minutes for flavor absorption.
  4. Heat the grill to medium-high. Ensure the grates are clean and lightly oiled.
  5. Place the steaks on the grill and cook for 5-7 minutes per side or until grill marks appear and they're tender (not mushy).
  6. Garnish with fresh herbs and drizzle with any remaining marinade before serving.
