Ingredients:

  • 1 pound fresh mushrooms (e.g., cremini, button, shiitake), sliced
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 2 cups vegetable broth (or beef broth for a richer flavor)
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)

Instructions:

  1. Heat olive oil and butter in a large skillet over medium heat. Add chopped onion and garlic. Sauté until softened (about 3-4 minutes).
  2. Add sliced mushrooms, thyme, salt, and pepper. Cook until mushrooms are browned and have released their moisture (about 8-10 minutes).
  3. Sprinkle flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes.
  4. Gradually whisk in vegetable broth, soy sauce, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
  5. Simmer for 5-10 minutes until gravy thickens, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Serve hot over your choice of base.
