Ingredients:
- 1 pound fresh mushrooms (e.g., cremini, button, shiitake), sliced
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- 2 tablespoons all-purpose flour
- 2 cups vegetable broth (or beef broth for a richer flavor)
- 1 tablespoon soy sauce

- 1 teaspoon Dijon mustard (optional)
Instructions:
- Heat olive oil and butter in a large skillet over medium heat. Add chopped onion and garlic. Sauté until softened (about 3-4 minutes).

- Sprinkle flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes.
- Gradually whisk in vegetable broth, soy sauce, Worcestershire sauce, and Dijon mustard. Bring to a simmer.
- Simmer for 5-10 minutes until gravy thickens, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot over your choice of base.
