  • 2 tablespoons olive oil (30 ml)
  • 2 teaspoons fresh lemon juice (10 ml)
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh herbs (e.g., dill, parsley, or thyme), chopped (about 1 tablespoon/15 g)
  • Lemon wedges (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with foil, leaving enough excess to wrap around the salmon.
  3. In a small bowl, combine olive oil, lemon juice, minced garlic, salt, pepper, and chopped herbs.
  4. Place the salmon fillets on the prepared foil and brush the herb mixture generously over each fillet.
  5. Fold the foil over the salmon to create a sealed packet, ensuring no openings remain.
  6. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
  7. Carefully open the foil (watch for steam!), and serve with lemon wedges, if desired.
