Ingredients:
- 1 pound smoked sausage, sliced
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup long-grain rice, uncooked
- 2 cups chicken broth
- 1 can diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and pepper to taste
- Optional: 1 cup shredded cheddar cheese
- Optional: Fresh parsley, chopped
Instructions:
- Preheat the oven to 350°F (175°C).
- Heat skillet over medium heat. Add sausage slices and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add onion and bell pepper. Sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
- In the casserole dish, combine cooked sausage, sautéed vegetables, rice, chicken broth, diced tomatoes, Italian seasoning, and paprika. Season with salt and pepper.
- Cover the casserole with foil and bake for 30 minutes. Remove foil, stir, and bake for another 15 minutes until rice is tender and liquid is absorbed.
- If using, sprinkle cheese on top and return to the oven until melted, about 5 minutes.
- Top with fresh parsley before serving.
