Ingredients:

  • 1 pound smoked sausage, sliced
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain rice, uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Optional: 1 cup shredded cheddar cheese
  • Optional: Fresh parsley, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Heat skillet over medium heat. Add sausage slices and cook until browned, about 5 minutes. Remove and set aside.
  3. In the same skillet, add onion and bell pepper. Sauté until softened, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
  4. In the casserole dish, combine cooked sausage, sautéed vegetables, rice, chicken broth, diced tomatoes, Italian seasoning, and paprika. Season with salt and pepper.
  5. Cover the casserole with foil and bake for 30 minutes. Remove foil, stir, and bake for another 15 minutes until rice is tender and liquid is absorbed.
  6. If using, sprinkle cheese on top and return to the oven until melted, about 5 minutes.
  7. Top with fresh parsley before serving.
