Ingredients:
- 2 lbs (900g) boneless, skinless chicken breasts
- 1 packet (1 oz or 28g) taco seasoning
- 1 cup (240ml) chicken broth or water
- 1/2 cup (120ml) barbecue sauce (optional)
- 1/4 cup (60ml) apple cider vinegar
- 1/2 medium onion, sliced (optional)
Instructions:
- If using, arrange sliced onion at the bottom of the slow cooker.
- Place the chicken breasts on top of the onion (if using) or directly into the slow cooker.
- Sprinkle the taco seasoning evenly over the chicken. Pour in the chicken broth and apple cider vinegar.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the chicken is easily shredded with a fork.
- Remove the chicken from the slow cooker to a large bowl. Use two forks to shred the chicken.
- Return the shredded chicken to the slow cooker. Stir in the barbecue sauce (if using). Cook on low for another 30 minutes to allow the flavors to meld.
- Serve hot in your favourite way.
