Ingredients:

  • 2 lbs (900g) boneless, skinless chicken breasts
  • 1 packet (1 oz or 28g) taco seasoning
  • 1 cup (240ml) chicken broth or water
  • 1/2 cup (120ml) barbecue sauce (optional)
  • 1/4 cup (60ml) apple cider vinegar
  • 1/2 medium onion, sliced (optional)

Instructions:

  1. If using, arrange sliced onion at the bottom of the slow cooker.
  2. Place the chicken breasts on top of the onion (if using) or directly into the slow cooker.
  3. Sprinkle the taco seasoning evenly over the chicken. Pour in the chicken broth and apple cider vinegar.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until the chicken is easily shredded with a fork.
  5. Remove the chicken from the slow cooker to a large bowl. Use two forks to shred the chicken.
  6. Return the shredded chicken to the slow cooker. Stir in the barbecue sauce (if using). Cook on low for another 30 minutes to allow the flavors to meld.
  7. Serve hot in your favourite way.
