Ingredients:

  • 2 cans (5 oz each) albacore tuna in water, drained thoroughly
  • 1/3 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1/4 cup celery, finely diced
  • 2 tbsp red onion, minced
  • 1 tbsp fresh lemon juice
  • 1/2 tsp black pepper
  • 1/4 tsp kosher salt
  • 2 large everything bagels, sliced in half
  • 1 tbsp unsalted butter, softened
  • 4 thick slices sharp cheddar cheese
  • 1 large tomato, sliced into 4 rounds
  • 1 tbsp fresh chives, chopped (optional)

Instructions:

  1. In a medium mixing bowl, flake the drained tuna with a fork. Fold in the mayonnaise, Dijon mustard, diced celery, minced red onion, lemon juice, salt, and pepper until the mixture is creamy and well combined.
  2. Place the bagel halves cut-side up on a rimmed sheet pan. Lightly butter the cut surfaces of each bagel. Place under the broiler for 1–2 minutes until the edges are golden brown.
  3. Divide and spread the tuna mixture evenly onto each toasted bagel half. Top each portion with one tomato slice and one thick slice of cheddar cheese.
  4. Bake the assembled bagels at 400°F (200°C) for 3 minutes. Switch the oven to the broiler setting for an additional 1–2 minutes until the cheese is bubbling and browned. Remove from the oven and garnish with fresh chives.
