Ingredients:
- 2 cans (5 oz each) albacore tuna in water, drained thoroughly
- 1/3 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/4 cup celery, finely diced
- 2 tbsp red onion, minced
- 1 tbsp fresh lemon juice
- 1/2 tsp black pepper
- 1/4 tsp kosher salt
- 2 large everything bagels, sliced in half
- 1 tbsp unsalted butter, softened
- 4 thick slices sharp cheddar cheese
- 1 large tomato, sliced into 4 rounds
- 1 tbsp fresh chives, chopped (optional)
Instructions:
- In a medium mixing bowl, flake the drained tuna with a fork. Fold in the mayonnaise, Dijon mustard, diced celery, minced red onion, lemon juice, salt, and pepper until the mixture is creamy and well combined.
- Place the bagel halves cut-side up on a rimmed sheet pan. Lightly butter the cut surfaces of each bagel. Place under the broiler for 1–2 minutes until the edges are golden brown.
- Divide and spread the tuna mixture evenly onto each toasted bagel half. Top each portion with one tomato slice and one thick slice of cheddar cheese.
- Bake the assembled bagels at 400°F (200°C) for 3 minutes. Switch the oven to the broiler setting for an additional 1–2 minutes until the cheese is bubbling and browned. Remove from the oven and garnish with fresh chives.
