Ingredients:
- 1 large bag (10-12 oz / 280-340g) tortilla chips (restaurant-style recommended for sturdiness)
- 1 lb (454g) ground beef (at least 80% lean)
- 1 packet (approx. 1 oz / 28g) taco seasoning
- ½ cup (120ml) water
- 2 cups (225g) shredded cheddar cheese
- 1 cup (115g) shredded Monterey Jack cheese
- 1 cup (237ml) sour cream
- 1 cup (140g) diced tomatoes
- ½ cup (50g) sliced black olives
- ½ cup (30g) sliced green onions
- 1-2 jalapeños, thinly sliced (optional)
- Guacamole, for serving (optional)
- Salsa, for serving (optional)
Instructions:
- Preheat oven to 375°F (190°C).
- In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spatula. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the water has evaporated and the beef is nicely seasoned.
- Spread the tortilla chips evenly on the prepared sheet pan in a single layer (or as close to single layer as possible).
- Sprinkle the seasoned ground beef evenly over the chips. Then, sprinkle with both cheddar and Monterey Jack cheeses.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with sour cream, diced tomatoes, black olives, green onions, and jalapeños (if using).
- Serve immediately with guacamole and salsa on the side, if desired.
