Ingredients:

  • 1 large bag (10-12 oz / 280-340g) tortilla chips (restaurant-style recommended for sturdiness)
  • 1 lb (454g) ground beef (at least 80% lean)
  • 1 packet (approx. 1 oz / 28g) taco seasoning
  • ½ cup (120ml) water
  • 2 cups (225g) shredded cheddar cheese
  • 1 cup (115g) shredded Monterey Jack cheese
  • 1 cup (237ml) sour cream
  • 1 cup (140g) diced tomatoes
  • ½ cup (50g) sliced black olives
  • ½ cup (30g) sliced green onions
  • 1-2 jalapeños, thinly sliced (optional)
  • Guacamole, for serving (optional)
  • Salsa, for serving (optional)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it up with a spatula. Drain off any excess grease.
  3. Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the water has evaporated and the beef is nicely seasoned.
  4. Spread the tortilla chips evenly on the prepared sheet pan in a single layer (or as close to single layer as possible).
  5. Sprinkle the seasoned ground beef evenly over the chips. Then, sprinkle with both cheddar and Monterey Jack cheeses.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with sour cream, diced tomatoes, black olives, green onions, and jalapeños (if using).
  8. Serve immediately with guacamole and salsa on the side, if desired.
