Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1/2 cup low-sodium chicken broth
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1/2 tsp onion powder

Instructions:

  1. Place the chicken breasts in the bottom of the slow cooker in a single layer.
  2. In a small bowl, whisk together the chicken broth, salt, pepper, garlic powder, and onion powder.
  3. Pour the seasoned broth mixture evenly over the chicken, ensuring every piece is lightly coated.
  4. Cover the pot with a tight-fitting lid. Cook on HIGH for 3–4 hours or on LOW for 7–8 hours until the internal temperature reaches 165°F (74°C).
  5. Remove the chicken to a plate or leave it in the pot. Use two forks to pull the meat apart along the natural grain, or use a hand mixer on low speed for 30 seconds.
  6. Return the shredded meat to the slow cooker and toss it in the remaining juices until the liquid is fully absorbed.
