Ingredients:

  • 6 large eggs (300 g)
  • 1 cup milk (240 ml, whole or semi-skimmed)
  • 1 cup shredded cheese (100 g, e.g. cheddar, Swiss, or feta)
  • 1 cup fresh spinach, chopped (30 g)
  • 1/2 cup bell pepper, diced (75 g)
  • 1/2 cup onion, diced (75 g)
  • Salt and pepper, to taste
  • 1 tsp dried herbs (optional, e.g. thyme or oregano)
  • 1/2 cup cooked bacon or ham, diced (75 g)
  • 1/2 cup diced mushrooms (75 g)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Chop onions, bell peppers, and spinach (and any other veggies you're including). If using, dice cooked bacon or ham.
  3. In a mixing bowl, whisk together the eggs and milk until well combined.
  4. Add salt, pepper, and dried herbs to the egg mixture.
  5. Stir in the shredded cheese, vegetables, and optional meat into the egg mixture.
  6. Pour the mixture into a greased non-stick pie dish.
  7. Bake in the preheated oven for 30-35 minutes or until the center is set and slightly golden.
  8. Allow to cool for 5-10 minutes before slicing. Serve warm.
