Ingredients:
- 6 large eggs (300 g)
- 1 cup milk (240 ml, whole or semi-skimmed)
- 1 cup shredded cheese (100 g, e.g. cheddar, Swiss, or feta)
- 1 cup fresh spinach, chopped (30 g)
- 1/2 cup bell pepper, diced (75 g)
- 1/2 cup onion, diced (75 g)
- Salt and pepper, to taste
- 1 tsp dried herbs (optional, e.g. thyme or oregano)
- 1/2 cup cooked bacon or ham, diced (75 g)
- 1/2 cup diced mushrooms (75 g)
Instructions:
- Preheat your oven to 375°F (190°C).
- Chop onions, bell peppers, and spinach (and any other veggies you're including). If using, dice cooked bacon or ham.
- In a mixing bowl, whisk together the eggs and milk until well combined.
- Add salt, pepper, and dried herbs to the egg mixture.
- Stir in the shredded cheese, vegetables, and optional meat into the egg mixture.
- Pour the mixture into a greased non-stick pie dish.
- Bake in the preheated oven for 30-35 minutes or until the center is set and slightly golden.
- Allow to cool for 5-10 minutes before slicing. Serve warm.
