Ingredients:

  • 1.5 lbs (680g) zucchini, washed and sliced into ½-inch rounds
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced (about 1 teaspoon)
  • ½ teaspoon (2.5ml) dried Italian herbs (or a mix of oregano, basil, and thyme)
  • ¼ teaspoon (1.25ml) red pepper flakes (optional, for a bit of a kick)
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon (15ml) fresh lemon juice (optional, for brightness)
  • 2 tablespoons (30ml) freshly chopped parsley, for garnish

Instructions:

  1. Slice the zucchini into even, ½-inch thick rounds.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Don't let it brown or burn, mind!
  3. Add the sliced zucchini, Italian herbs, and red pepper flakes (if using) to the skillet. Season with salt and pepper.
  4. Sauté the zucchini, stirring occasionally, until it's tender-crisp and lightly browned, about 8-10 minutes. This is how to create a delicious sauteed zucchini recipe.
  5. Remove from heat. Stir in lemon juice (if using). Garnish with fresh parsley and serve immediately.
