Ingredients:
- 1.5 lbs (680g) zucchini, washed and sliced into ½-inch rounds
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced (about 1 teaspoon)
- ½ teaspoon (2.5ml) dried Italian herbs (or a mix of oregano, basil, and thyme)
- ¼ teaspoon (1.25ml) red pepper flakes (optional, for a bit of a kick)
- Salt and freshly ground black pepper to taste
- 1 tablespoon (15ml) fresh lemon juice (optional, for brightness)
- 2 tablespoons (30ml) freshly chopped parsley, for garnish
Instructions:
- Slice the zucchini into even, ½-inch thick rounds.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Don't let it brown or burn, mind!
- Add the sliced zucchini, Italian herbs, and red pepper flakes (if using) to the skillet. Season with salt and pepper.
- Sauté the zucchini, stirring occasionally, until it's tender-crisp and lightly browned, about 8-10 minutes. This is how to create a delicious sauteed zucchini recipe.
- Remove from heat. Stir in lemon juice (if using). Garnish with fresh parsley and serve immediately.
