Ingredients:

  • 1 pound (454g) fresh green beans, trimmed
  • 2 tablespoons (30ml) olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, adjust to taste)
  • 2 tablespoons (30ml) lemon juice, freshly squeezed
  • 1 tablespoon (15ml) water
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons (12g) roughly chopped fresh parsley, for garnish

Instructions:

  1. Rinse the green beans thoroughly and trim the ends. If the beans are particularly long, cut them in half for easier eating.
  2. Heat the olive oil in a large skillet or wok over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 30 seconds, or until fragrant. Be careful not to burn the garlic.
  3. Add the green beans to the skillet and sauté for 5-7 minutes, stirring frequently, until they are crisp-tender. They should still have a bit of bite to them.
  4. Pour in the lemon juice and water. Stir well to coat the green beans. Season with salt and pepper to taste.
  5. Transfer the green beans to a serving dish. Garnish with chopped fresh parsley. Serve immediately.
