Ingredients:
- 6 large eggs
- 3 tablespoons full-fat mayonnaise
- 1 tablespoon prepared yellow mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Paprika, for garnish (sweet or smoked, optional)
Instructions:
- Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 12 minutes.
- Immediately transfer eggs to an ice bath to stop cooking. Peel the eggs once cool enough to handle.
- Cut the eggs in half lengthwise. Gently remove yolks and place them in a mixing bowl.
- Using a fork, mash the yolks until smooth.
- Add mayonnaise, mustard, salt, and pepper to the yolks. Mix well until smooth and creamy. Taste and adjust seasoning as needed.
- Spoon or pipe the yolk mixture back into the egg white halves.
- Sprinkle with paprika. Chill for at least 15 minutes before serving (optional).
