Ingredients:

  • 6 large eggs
  • 3 tablespoons full-fat mayonnaise
  • 1 tablespoon prepared yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Paprika, for garnish (sweet or smoked, optional)

Instructions:

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat, cover, and let stand for 12 minutes.
  2. Immediately transfer eggs to an ice bath to stop cooking. Peel the eggs once cool enough to handle.
  3. Cut the eggs in half lengthwise. Gently remove yolks and place them in a mixing bowl.
  4. Using a fork, mash the yolks until smooth.
  5. Add mayonnaise, mustard, salt, and pepper to the yolks. Mix well until smooth and creamy. Taste and adjust seasoning as needed.
  6. Spoon or pipe the yolk mixture back into the egg white halves.
  7. Sprinkle with paprika. Chill for at least 15 minutes before serving (optional).
