Ingredients:

  • 5 tablespoons olive oil, extra virgin (60ml)
  • 2 medium zucchini, ends trimmed and sliced into ½-inch (1.25cm) rounds (About 500g)
  • 2 cloves garlic, minced (About 6g)
  • 1/4 teaspoon red pepper flakes (optional) (About 0.5g)
  • 1 tablespoon fresh herbs, chopped (parsley, basil, oregano, thyme, or a mix) (About 5g)
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add zucchini slices to the skillet in a single layer (work in batches if needed).
  3. Sauté zucchini, turning occasionally, until tender-crisp and lightly golden brown (about 5-7 minutes).
  4. Add minced garlic and red pepper flakes (if using) to the skillet. Cook for 1 minute, or until fragrant, being careful not to burn the garlic.
  5. Stir in fresh herbs, season with salt and pepper to taste.
  6. Serve immediately. This recipe shows you exactly how to cook zucchini perfectly.
