Ingredients:
- 1.5 lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
- 1/8 tsp cayenne pepper
Instructions:
- Pat the chicken thighs aggressively with paper towels. Note: This removes surface moisture that prevents browning.
- Place chicken thighs in a large mixing bowl.
- Toss with olive oil until every piece is glossy. Note: This creates a protective barrier against the dry air.
- Combine smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper in a small bowl.
- Sprinkle the rub over the chicken and massage it in with your hands. until the meat is completely coated in a red paste.
- Arrange the thighs in a single layer in the air fryer basket. Note: Do not overlap, or they'll steam instead of sear.
- Cook at 400°F (200°C) for 10 minutes.
- Flip the thighs using tongs. until you smell the paprika caramelizing.
- Cook for another 8-10 minutes until the edges are charred and the internal temperature hits 165°F (74°C).
- Remove to a plate and let rest for 5 minutes.
