Ingredients:
- 1 cup (2 sticks) unsalted butter, softened (226g)
- 3 cups granulated sugar (600g)
- 6 large eggs (approx. 300g)
- 3 cups all-purpose flour (360g)
- 1/2 teaspoon baking powder (2.5g)
- 1/4 teaspoon salt (1.5g)
- 1 cup milk (240ml)
- 2 teaspoons pure vanilla extract (10ml)
Instructions:
- Preheat oven to 325°F (160°C). Grease and flour the loaf pan.
- In a large bowl, cream together softened butter and sugar until light and fluffy. This can take 3-5 minutes.
- Beat in eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Stir in vanilla extract.
- Pour batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
